Kid-Friendly Open-Faced Sandwiches!

From shopping for new school supplies, to getting your getting kids back into a routine after a long summer break, back-to-school season can be hectic!

One thing typically on parents’ minds at this time of year is what to pack in their kids for lunch. Providing a healthy lunch while balancing what they like can sometimes feel like a struggle. Don’t worry, we’ve got you covered with these Funny-Faced Egg Salad Sandwiches, they’re sure to provide a healthy, kid-friendly school lunch!

Ingredients

2 tbsp / 30 ml light or regular mayonnaise

1 tbsp / 15 ml minced celery

1 tbsp / 15 ml minced onion

2 slice whole grain bread

Assorted vegetables (optional)

Rice crackers (optional)

Tortilla chips (optional)

Rosemary, parley or chive stems (optional)

Directions

1. Grate Salt & Pepper eggs into a small bowl; blend in mayonnaise, celery and onion.

2. Spread over one slice of bread. Top with assorted vegetables, crackers and tortilla chips (see tips).

Tips

- For a Friendly-Face Sandwich: follow instructions as stated above. Cut a hard-boiled egg horizontally into slices and place two slices near the top the bread to create the eyes. Next, place one olive ring on top of each hard-boiled egg slices to create the eye pupils. Finally, take shredded carrot to create hair, a pickle to create a nose, a slice of orange pepper to create a mouth and two round rice crackers to create ears. You’ve now created a friendly-faced sandwich!

- For a Bunny-Face Sandwich: follow instructions as stated above. Cut a hard-boiled egg horizontally into slices, then take one slice and cut it in half again to create two half circles. Take each half circle and place near the top of the bread to create the eyes. Next, take an olive ring, cut it half and place each half on top of the hard-boiled eggs to create the eye pupils. Take a whole olive and cut in half, then cut the edges off the bottom half of the olive and place near the centre of the bread to create the nose. Take two slices of red pepper to create the mouth and take rosemary, parsley or chive stems to create whiskers. Finally, take triangle-shaped rice crackers or tortilla chips to create ears. You’ve now created a bunny-faced sandwich!

- For a Bear-Face Sandwich: follow instructions as stated above. Cut a hard-boiled egg horizontally into slices and place two slices near the top the bread to create the eyes. Next, place one olive ring on top of each hard-boiled egg slice to create the eye pupils. Take a whole olive and slice it is half to create the nose and take two slices of red pepper to create the mouth. Finally, take two round rice crackers to create ears. You’ve now created a bear-y great sandwich!

- For a Pig-Face Sandwich: follow instructions as stated above. Take a slice of ham and place on top of the bread with egg salad. Next, place two olive ring on the ham towards the top to create eyes. Cut a hard-boiled egg horizontally into slices and place one slice in the centre of the slice of ham to create the nose. Take the end of an olive and cut in half. Place the olive halves on top of the hard-boiled eggs to create nostrils for the nose. Finally, take a slice of red pepper to create the mouth and two triangle shaped rice crackers or tortilla chips to create the ears. You’ve now created a pig-faced sandwich!

Tips

- Place assorted vegetables, deli meats and hard-boiled egg slices in a separate container for your kids to customize their own animal face during lunch.

- Serve this basic egg spread on any choice of bread, wrap or bun.

- Replace the mayonnaise with low fat yogurt if desired.

- Substitute Salt and Pepper Hard Boiled eggs with Omega 3 or Dill eggs.
