2 tsp / 10 ml | prepared basil pesto |
salt and pepper (optional) | |
1 | ciabatta bun, halved and toasted |
4 | grape tomatoes, sliced |

Directions
Mash avocado with basil pesto. Season with salt and pepper to taste (if using).
Spread avocado mixture over toasted ciabatta buns. Top with sliced tomatoes and Salt & Pepper eggs. Drizzle with balsamic glaze and garnish with basil. Serve immediately.
Tips
Replace the ciabatta bun with sliced crusty Italian bread.
