|1||ciabatta bun, halved and toasted|
|4||grape tomatoes, sliced|

Mash avocado with basil pesto. Season with salt and pepper to taste (if using).
Spread avocado mixture over toasted ciabatta buns. Top with sliced tomatoes and Salt & Pepper eggs. Drizzle with balsamic glaze and garnish with basil. Serve immediately.
Replace the ciabatta bun with sliced crusty Italian bread.
