Ingredients
- 1 cup / 250 g
- Egg Creations Egg Creations Fat Free Original (any flavour of Egg Creations will work!)
- 6
- flour tortillas (10”/25 cm)
- 1 1/2 cup / 375 ml
- cold, cooked rice (optional)
- 6-12 tbsp / 90-180 ml
- black beans, rinsed and drained
- 1
- medium sweet red pepper, cut in strips
- 3/4 cup / 175 ml
- shredded lettuce
- 12 tbsp / 180 ml
- shredded Monterey Jack or Cheddar cheese
- 6 tbsp / 90 ml
- salsa
Directions
Pour Egg Creations™ into large heated frying pan sprayed with cooking spray. Cook like an omelette, pulling mixture from sides to centre of pan until set. Remove from pan. Cool; cut into strips. Set aside.
Layer rice, beans, peppers, lettuce, cheese and egg across centre of tortilla. Drizzle salsa on top. Fold in 2 sides of tortilla and roll up tightly. Warm 10 seconds in a microwave for the best flavour.
Tips
If eating immediately, fold in 1 side of the tortilla which holds in the filling and leave other side open for easy eating.
For wrapping to pack in a lunch box fold in both sides so the closed ends keep the filling in place.
Use any colour, flavour tortilla you like.
For a heartier burrito, add strips of cooked chicken breast or ham.
