Abilene Refried Beans and Egg Casserole

|1 cup / 250 ml||coarsely broken tortilla chips|
|1 cup / 250 ml||refried beans|
|1 1/2 cup / 375 g||Naturegg Omega Plus cracked eggs, well shaken|
|2 tsp / 10 ml||chili powder|
|1/2 tsp / 2 ml||each salt and pepper|
|1/2 medium||red or green pepper, diced|
|2||green onions, chopped|
|10||whole tortilla chips|
|1/4 cup / 50 ml||shredded Monterey Jack or cheddar cheese|
Sprinkle broken tortilla chips over bottom of greased 9” (23 cm) pie plate. Drop small spoonfuls of refried beans evenly over chips.
Whisk liquid eggs with chili powder, salt and pepper. Stir in peppers and onions. Pour over bean mixture.
Bake at 400°F (200°C) 20 minutes. Arrange whole tortillas in centre of egg mixture and sprinkle with cheese. Return to oven and bake about 10 minutes longer or until eggs are set. Slice into wedges and serve with salsa.
