Cranberry Orange Muffins

|2 1/2 cup / 625 ml||all purpose flour|
|1/2 cup / 125 ml||sugar|
|1 tbsp / 15 ml||baking powder|
|1/2 tsp / 2 ml||salt|
|1/2 cup / 125 ml||dried cranberries|
|1/4 cup / 50 g||Naturegg Omega Plus cracked eggs, well shaken|
|1/4 cup / 300 ml||milk|
|1/3 cup / 75 ml||vegetable oil|
|1 tbsp / 15 ml||grated orange rind|
|Orange Glaze (optional)|
In large bowl, mix flour, sugar, baking powder, salt and cranberries.
In another bowl, whisk together eggs, milk, oil and orange rind. Pour into dry ingredients and stir just until blended.
Spoon into greased muffin tins, using about 1/4 cup (50 mL) batter for each.
Bake at 400°F (200°C) 18-20 minutes or until lightly browned.
Cool on rack. Spread with glaze, if desired.
