Ingredients

- EGG Bites! 5 Cheese
- 1/2 cup / 125 ml
- extra virgin olive oil
- 1/2 cup / 125 ml
- packed mixed fresh herbs such as basil, parsley, chives, dill, mint and/or cilantro
- 3 tbsp / 45 ml
- cider or white wine vinegar
- 1 clove
- garlic, grated
- 1/2 tsp / 2 ml
- each salt and pepper (or to taste)
- 2 cup / 500 ml
- spring green mix or torn lettuce
- 1 cup / 250 ml
- assorted chopped fresh veggies such as tomatoes, bell pepper, carrots, cucumber, celery, broccoli, cauliflower, radish, red cabbage and green onion
- 1 tbsp / 15 ml
- unsalted pumpkin or sunflower seeds
Directions
Heat EGG Bites! according to package directions. Allow to cool slightly while preparing remaining ingredients.
Combine olive oil, herbs, vinegar, salt and pepper in a blender; blend until smooth. Makes 2/3 cups (150 mL) dressing. Dressing can be transferred to a jar and stored in the refrigerator for up to 1 week.
Toss greens and vegetables with 1 tbsp (15 mL) of the prepared dressing.
Cut EGG Bites! into 4 pieces and scatter over top along with seeds. Drizzle eggs with 1 tsp (5 mL) additional dressing (or to taste).
Tips
Replace the EGG Bites! 5 Cheese with Cheese & Bacon flavour if preferred.
For a speedy shortcut, replace the homemade herb vinaigrette with your favourite bottled salad dressing.
For even more protein and flavour, top salad with 1/4 cup (60 ml) chopped, crumbled or grated cheese such as cheddar, Havarti, Swiss, feta or goat cheese.
