Ingredients

1 cup / 250 g Naturegg Omega Plus - cracked eggs, well shaken
1/2 tsp / 2 ml chili powder
1/4 tsp / 1 ml each salt and pepper
1 clove of garlic, minced
2 tsp / 10 ml vegetable oil
4 large soft flour tortillas
2 green onions, chopped
1 cup / 250 ml shredded lettuce
1 cup / 250 ml shredded low fat cheddar cheese
1/4 cup / 50 ml chopped cilantro
1/2 cup / 125 ml prepared tomato salsa

Directions

  1. Whisk together liquid eggs, chili powder, salt and pepper.

  2. In skillet, heat oil over medium heat, sauté garlic a few seconds. Pour in egg mixture; cook, stirring frequently, until eggs are softly scrambled. Remove from heat.

  3. Spoon about ¼ cup (50 ml) egg mixture onto middle of each tortilla. Top with green onions, lettuce, cheese, cilantro and salsa; roll up. Serve immediately.
