|1/4 tsp / 1 ml||each salt and pepper|
|1||clove of garlic, minced|
|2 tsp / 10 ml||vegetable oil|
|4||large soft flour tortillas|
|2||green onions, chopped|
|1 cup / 250 ml||shredded lettuce|
|1 cup / 250 ml||shredded low fat cheddar cheese|
|1/4 cup / 50 ml||chopped cilantro|
|1/2 cup / 125 ml||prepared tomato salsa|
Whisk together liquid eggs, chili powder, salt and pepper.
In skillet, heat oil over medium heat, sauté garlic a few seconds. Pour in egg mixture; cook, stirring frequently, until eggs are softly scrambled. Remove from heat.
Spoon about ¼ cup (50 ml) egg mixture onto middle of each tortilla. Top with green onions, lettuce, cheese, cilantro and salsa; roll up. Serve immediately.
