Fast and Easy Fried Rice
An attractive, versatile dish to serve as a meal or side dish.

|1 cup / 250 g||Egg Creations Fat Free Garden Vegetable|
|2 tbsp / 30 ml||olive oil|
|1/2 cup / 375 ml||sliced mushrooms|
|1 cup / 250 ml||diced sweet red pepper|
|4 cup / 1 L||cooked rice (1-1/3 cups/325 mL raw rice)|
|1 cup / 250 ml||green peas, frozen and thawed|
|2||green onions, sliced|
|2 tbsp / 30 ml||soy sauce, optional|
Pour Egg Creations™ into heated 10” (25 cm) frying pan sprayed with cooking spray*. Cook like an omelette, pulling mixture from sides to centre of pan until set. Remove from pan. Cool; cut into strips. Set aside.
Heat olive oil in same pan or wok. Sauté mushrooms and red pepper, stirring often until tender. Add rice. Cook, stirring to mix well. Add peas, onions and egg strips. Heat through. If desired, stir in soy sauce. Mix well. Serve hot.
Add 1 cup (250 mL) cooked chicken, pork or beef strips or shrimp for a heartier rice dish.

For gluten-free: If using soy sauce, choose one that does not contain wheat and is gluten-free; and, grease pan with vegetable oil or gluten-free cooking spray.
