Ingredients

1
thick slice of your favourite bread
olive oil or non-hydrogenated margarine
1/4 cup / 50 g
Egg Creations Fat Free Garden Vegetable or Egg Creations Fat Free Cheese & Chive
1 tbsp / 15 ml
shredded Cheddar cheese, optional

Directions

  1. Cut a 2” (5 cm) circle in centre of bread slice. Brush both sides of bread lightly with olive oil or margarine.

  2. Heat a frying pan large enough to hold bread slice. Cook bread until golden on one side. Turn over. Fill centre hole with Egg Creation. Cover pan and cook on low heat until egg is set, about 5 minutes. If desired, sprinkle cheese over circle of egg. Serve warm.

Tips

  1. Toast circle of bread that you remove from centre and use it as a garnish.

  2. These can be prepared and kept warm in a warm oven until the required numbers have been cooked.

Tips: Hard Boiled

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
