EGGS2go! Hard-Boiled Eggs 6-Pack Pouch
1 cup
grilled corn, or corn kernels browned in a skillet
1/4 cup
scallions, finely chopped
1/4 cup
jalapenos, diced
1/4 cup
cilantro, finely chopped
1/2 cup
mayonnaise
juice of 1 lime
pinch of salt
Tajin seasoning for dipping
Jalapenos for garnish

Directions

  1. Slice the EGGS2go! hard boiled eggs lengthwise and carefully remove the yolks, set aside.

  2. In a mixing bowl, combine the egg yolks, grilled corn, scallions, jalapenos, cilantro, mayonnaise, lime juice, and a pinch of salt. Mash the ingredients together until smooth and creamy. Transfer the mixture into a piping bag and set aside.

  3. Dip the rim of the egg whites into Tajin seasoning.

  4. Pipe the yolk filling into each seasoned egg white.

  5. Garnish with slices of jalapenos.

Tips: Hard Boiled

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
