Lazy Lasagna

This skillet dish is a Mexican-inspired twist on a comfort food classic.

onion, chopped
cloves of garlic, minced
1 cup / 250 ml
chopped green pepper
1 tbsp / 15 ml
chili powder
1 tsp / 5 ml
each dried oregano leaves and ground cumin
1 can / 5 ml
black beans, drained and well-rinsed cumin
1 1/2 cup / 375 ml
no salt added tomato sauce or puree
3/4 cup / 175 ml
each prepared salsa and corn kernels
3 cup / 750 ml
cooked, whole wheat rotini
Cheese Sauce:
1 cup / 250 ml
2 % milk
2 tsp / 10 ml
1/2 tsp / 2 ml
dried oregano leaves
1/4 tsp / 1 ml
ground cumin
clove of garlic, minced
1/2 cup / 125 g

1 cup / 250 ml
shredded, reduced-fat cheddar cheese, divided
1/4 cup / 50 ml
chopped green onion


  1. Heat the oil in a large, deep, ovenproof skillet set over medium heat. Add the onion, 1 clove of garlic, green pepper, chili powder, oregano, cumin. Cook, for 5 minutes, or until vegetables soften. Stir in black beans, tomato sauce, salsa and corn; bring to a boil. Stir in the rotini.

  2. Cheese Sauce: Meanwhile, whisk the milk with the cornstarch, oregano, cumin and garlic. Microwave on High for 2 minutes, or until steaming. Whisking constantly, gradually stir in the eggs. Microwave on High for 90 seconds, stirring once, or until thickened.

  3. Stir in 3/4 cup (175 mL) of the cheese until melted. Spoon the egg mixture into the centre of the pan. Sprinkle evenly with the remaining cheese and green onion. Broil for 2 minutes or until cheese is melted.
