Thanksgiving Leftovers Casserole

Ingredients

2 1/2 cup
leftover stuffing
1 to 1 1/2 cup
cooked turkey, chopped into small pieces
1 cup
shredded mozzarella cheese, divided
1/4 cup
milk

fresh chives, chopped
salt and pepper, to taste
butter or cooking spray (for greasing baking dish)

Directions

  1. Preheat the oven to 350°F (175°C). Grease an 8 × 8-inch baking dish with butter or cooking spray.

  2. Layer the stuffing evenly in the prepared dish. Add the chopped turkey on top and gently mix to combine.

  3. In a large bowl, whisk the eggs until smooth. Add the milk and whisk again. Stir in ½ cup of cheese, chives, salt, and pepper.

  4. Pour the egg mixture evenly over the stuffing and turkey. Sprinkle the remaining ½ cup of cheese on top.

  5. Bake for 35 to 40 minutes, or until the centre is set and the top is golden brown.

  6. Cool slightly, then slice into 9 portions. Serve warm.

  1. Store leftovers in an airtight container in the refrigerator for 2 to 3 days.

  2. Optional Add-ins: Feel free to add leftover vegetables like roasted Brussels sprouts or sweet potatoes for extra flavour and texture.
