Thanksgiving Leftovers Casserole

Ingredients
- 2 1/2 cup
- leftover stuffing
- 1 to 1 1/2 cup
- cooked turkey, chopped into small pieces
- 1 cup
- shredded mozzarella cheese, divided
- 1/4 cup
- milk
- 7

- 3 tbsp
- fresh chives, chopped
- salt and pepper, to taste
- butter or cooking spray (for greasing baking dish)
Directions
Preheat the oven to 350°F (175°C). Grease an 8 × 8-inch baking dish with butter or cooking spray.
Layer the stuffing evenly in the prepared dish. Add the chopped turkey on top and gently mix to combine.
In a large bowl, whisk the eggs until smooth. Add the milk and whisk again. Stir in ½ cup of cheese, chives, salt, and pepper.
Pour the egg mixture evenly over the stuffing and turkey. Sprinkle the remaining ½ cup of cheese on top.
Bake for 35 to 40 minutes, or until the centre is set and the top is golden brown.
Cool slightly, then slice into 9 portions. Serve warm.
Tips
Store leftovers in an airtight container in the refrigerator for 2 to 3 days.
