Three Step Orange Cranberry Pound Cake
This easy 3-step recipe makes a delicious loaf style cake perfect for any meal.

|1/2 cup / 125 ml||butter, softened|
|3/4 cup / 175 ml||granulated sugar|
|1/4 cup / 50 g||Naturegg Omega Plus cracked eggs, well shaken|
|2 tbsp / 30 ml||grated orange rind|
|1/2 tsp / 2 ml||vanilla|
|1 1/2 cup / 375 ml||all-purpose flour|
|1 tsp / 5 ml||baking powder|
|1/4 tsp / 1 ml||salt|
|1/2 cup / 125 ml||milk|
|1/2 cup / 125 ml||dried cranberries|
In mixer bowl, beat butter and sugar until light and fluffy. Beat in liquid eggs, orange rind and vanilla until smooth.
Combine flour, baking powder and salt. Gradually beat in dry ingredients alternately with milk just until blended. Stir in dried cranberries.
Spoon into greased 8x4” (20x10 cm) loaf pan. Bake at 350°F (180°C) 50-60 minutes or until cake tester inserted in centre comes out clean. Cool in pan 10 minutes then remove from pan to cool on rack. Serves 10.
Orange Glaze (optional): Combine ¼ cup (50 mL) icing sugar and 1 tbsp (15 mL) orange juice until smooth. Pierce top of warm cake with wooden pick. Spoon glaze evenly over top of hot cake. Let cool on rack before removing from pan.
