10% (half and half) cream or whole milk
1/3 cup / 75 ml
maple syrup
2 tsp / 10 ml
vanilla extract
1 tbsp / 15 ml
softened butter (approx.)

Directions

  1. Whisk eggs with cream, maple syrup and vanilla; set aside.

  2. Use butter to generously grease four 8 oz (250 mL) ramekins and cut four squares of aluminum foil to fit slightly larger than the ramekins.

  3. Divide cubed bread between ramekins. Divide egg custard mixture between ramekins, pressing the bread gently into the custard with the back of a spoon. Let stand for at least 20 minutes (can be transferred to refrigerator and chilled overnight).

  4. Set an air fryer set to 350ºF (180ºC). Cover each ramekin with the buttered foil squares and secure with kitchen twine. Air fry for 10 minutes; uncover ramekins. Sprinkle the tops with coarse sugar (if using); continue to air fry for 6 to 8 minutes more or until bread puddings are golden, puffed and set.

  5. Serve bread puddings warm, topped with a scoop of ice cream or sweetened whipped cream (if using).

Tips

  1. If you don’t have 8 oz (250 ml) ramekins, you can divide the recipe between six 4 oz (125 ml) ramekins, though you may need to cook in batches depending on the size of the air fryer basket.

  2. Securing the foil covers with kitchen twine helps to keep them from blowing off due to the intense air flow in an air fryer. Covering the tops keeps the puddings from overbrowning before they are set.

  3. To prepare in the oven, preheat to 375ºF (190ºC); cover ramekins and set on a baking tray. Bake for 15 minutes. Uncover and bake for 15 to 20 minutes or until golden, puffed and set.

  8. Raspberry White Chocolate Bread Pudding: Replace one slice of bread with 1 cup (250 mL) frozen raspberries and 1/4 cup (60 mL) white chocolate chips.

  9. Banana Butterscotch Bread Pudding: Replace 1 slice of bread with 1 chopped small banana chopped along with 1/4 cup (60 mL) butterscotch chips.
