|2 tbsp / 30 ml||light or regular mayonnaise|
|2 tbsp / 30 ml||sodium-reduced thick teriyaki sauce|
|1 tbsp / 15 ml||finely chopped water chestnuts|
|1 tbsp / 15 ml||finely chopped radish|
|2||large Boston or leafy lettuce leaves|
|shredded carrot and thinly sliced peppers (optional)|
Grate Teriyaki eggs into a small bowl; blend in mayonnaise, teriyaki sauce, water chestnuts and radish.
Divide the mixture between the two lettuce leaves. Top with carrot and peppers (if using). Roll up and eat like a burrito.
Serve this unique sandwich spread on any choice of bread, wrap or bun.
Replace the radish with celery or cucumber.
