|1 cup / 250 ml||cooked brown rice|
|1/2 cup / 125 ml||cooked edamame|
|1/2 cup / 125 ml||shredded cabbage|
|1/4 cup / 60 ml||shredded carrot|
|1/4 cup / 60 ml||chopped bell pepper|
|2 tbsp / 30 ml||Asian sesame vinaigrette (or to taste)|
|fresh cilantro leaves|
|toasted sesame seeds|

Arrange rice in a serving bowl; top with edamame, cabbage, carrot, peppers and quartered eggs. Drizzle with vinaigrette and garnish with cilantro and sesame seeds.
