Ingredients

All purpose Flour
1/4 cup / 50 ml
cornstarch
2 tbsp / 30 ml
granulated sugar
1 tbsp / 15 ml
baking powder
1/4 tsp / 1 ml
salt
1 cup / 250 ml
Milk
1/2 cup / 125 ml
EGG Creations Whole Eggs Original, well shaken
1/3 cup / 75 ml
Melted Butter
1 tsp / 5 ml
Vanilla Extract
1/3 cup / 75 ml
sparkling water
Cooking Spray
Optional toppings such as whipped cream, fresh fruit, maple syrup or icing sugar

Directions

  1. Preheat waffle maker according to manufacturers directions.

  2. Whisk flour with cornstarch, sugar, baking powder and salt in a large bowl. In a large glass measure, whisk milk with eggs, butter and vanilla. Add dry ingredients to wet; whisk until well blended. Add sparkling water and gently whisk just until uniformly combined.

  3. Lightly coat waffle maker with cooking spray. Pour 1/2 to 3/4 cup (125 to 175 ml) batter into the centre and close. Cook for about 5 minutes. Repeat until all batter is used up. (NOTE: Adjust the volume of batter and cook time according to your waffle maker's guidance. Size and yield will vary depending on the style of waffle maker used.)

  4. Serve warm with toppings, as preferred.

Tips

  1. To hold waffles warm while making batches, arrange a rack on a baking sheet and place in a 175 °F (80°C) oven. (The rack helps to keep the waffles crisp.)

  2. To make in a blender, measure in all ingredients starting with liquids first except for the sparkling water. Blend until well-mixed, scraping sides as needed. With the blender on low; add sparkling water, blending just until uniformly combined.

  3. Batter can be made up to 2 hours in advance. To make the night ahead, omit the sparkling water and whisk in while the waffle maker is preheating.
