Frozen Angel Pie

Ingredients

1/3 cup / 75 ml Naturegg Simply Egg Whites cracked egg whites, well shaken
dash cream of tartar dash
1/2 cup / 125 ml granulated sugar
1/3 cup / 75 ml finely crushed saltine crackers
4 cup / 1 L frozen yogurt, any flavour

Directions

  1. Beat liquid egg whites and cream of tartar until soft peaks form. Gradually beat in sugar and continue beating until stiff shiny peaks form.

  2. In lightly greased 9” (23 cm) pie plate, spread meringue. Form into a crust using back of spoon to push meringue up sides of pie plate and making an indent in centre.

  3. Bake at 350°F (180°C) 20-25 minutes or until dry and lightly browned. Cool on rack.

  4. Scoop frozen yogurt into pie crust. Freeze at least 2 hours or overnight.

Tips: Whipping

If you over beat egg whites and they're too stiff, gently stir in 1 or 2 unbeaten whites to every 5 or 6 whites or add a few teaspoons of sugar and beat again briefly until they are smooth.
