Ingredients

hot sauce (optional)
1 avocado
1 tbsp / 15 ml mild or medium salsa
salt and pepper (optional)
2 slice whole grain bread, toasted
2 tbsp / 30 ml cooked corn kernels
1 package / 84 g EGGS2go! Omega 3 Hard Boiled Snack Pack, sliced
2 tbsp / 30 ml crumbled feta
sliced green onion (garnish)

Directions

  1. Mash avocado with salsa. Season with salt, pepper and hot sauce to taste (if using).

  2. Spread avocado mixture over toasted bread. Top with corn and Omega 3 eggs. Sprinkle with feta and green onion. Serve immediately.

Tips

  1. Replace the corn with diced peppers.

  2. For a spicier sandwich, use hot salsa or a favourite hot sauce instead of mild salsa.
