Latino Breakfast Wraps

Our EGG Bakes! crustless quiches are delicious on their own but as this recipe shows, they can also be incorporated into wraps or other dishes.

Ingredients

medium tortillas

EGG Bakes! crustless quiches

tomatoes, chopped
6 oz / 175 g
corn, canned
1/4
red onion, chopped
1 tbsp
lime juice

small lettuce leaves
2 to 3
branches of parsley, chopped
salt, to taste

Directions

  1. In a hot pan (no oil or butter), on medium low, pour the corn, tossing frequently and cook for 4 to 5 minutes until charred. It looks slightly burnt, but it adds flavour. Set aside.

  2. Cook the crustless quiches EGG Bakes! as directed on the package (90 seconds in the microwave).

  3. In the meantime, make the salsa. In a bowl, toss together the tomatoes, onion, parsley, corn and lime juice. Add salt.

  4. Place the tortillas on a flat surface such as a clean chopping board and lay 2 lettuce leaves per tortilla. Top with some salsa.

  5. Slice the crustless quiches in stripes and add half a quiche to each tortilla. Add them to each wrap and fold them.

Tips

  1. The variations and toppings are endless: add some guacamole, some pepper flakes for a little spicy taste.

Tips: Hard Boiled

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
