Potato and Feta Patties

Ingredients

2 1/2 cup / 625 ml mashed cooked potatoes (4 large)
1 small onion, finely chopped
1/2 cup / 125 g Naturegg Omega Plus cracked eggs, well shaken
1/4 cup / 50 ml crumbled feta cheese
2 tsp / 10 ml chopped fresh mint
1/4 tsp / 1 ml each salt and pepper
1 tbsp / 15 ml vegetable oil
lemon wedges

Directions

  1. Break up potatoes, if clumped, using a fork. Mix onion, liquid eggs, feta, mint, salt and pepper. Pour over potato mixture and mix well. Shape into 8 patties, each about 3” (8 cm) in diameter.

  2. Heat oil in large skillet or griddle over high heat. Add patties to pan; cook, turning once, 5-8 minutes or until crisp and golden brown. Serve with lemon wedges, squeezing juice over patties.
