Potato and Feta Patties
These potato cakes get a flavour boost with the addition of salty, tangy feta cheese.

|2 1/2 cup / 625 ml||mashed cooked potatoes (4 large)|
|1||small onion, finely chopped|
|1/2 cup / 125 g||Naturegg Omega Plus cracked eggs, well shaken|
|1/4 cup / 50 ml||crumbled feta cheese|
|2 tsp / 10 ml||chopped fresh mint|
|1/4 tsp / 1 ml||each salt and pepper|
|1 tbsp / 15 ml||vegetable oil|
Break up potatoes, if clumped, using a fork. Mix onion, liquid eggs, feta, mint, salt and pepper. Pour over potato mixture and mix well. Shape into 8 patties, each about 3” (8 cm) in diameter.
Heat oil in large skillet or griddle over high heat. Add patties to pan; cook, turning once, 5-8 minutes or until crisp and golden brown. Serve with lemon wedges, squeezing juice over patties.
