|1 cup / 250 g||Simply Egg Whites liquid egg whites, well shaken|
|1/4 tsp / 1 ml||each salt and pepper|
|1/4 cup / 50 ml||shredded cooked skinless boneless chicken breast|
|2 tbsp / 30 ml||shredded low-fat cheddar cheese|
|1||green onion, chopped|
Spray 9” (23 cm) non-stick skillet generously with cooking spray; heat over medium-high heat. Pour in liquid egg whites; sprinkle with salt and pepper. Cook and stir for 30 seconds. Let cook 1-2 minutes or until eggs are almost set and bottom is browned.
Sprinkle centre of omelette evenly with chicken, cheese and green onion. Reduce heat to medium; cover and cook 1-2 minutes or until set. Fold two sides of omelette over filling. Cut in half and slide onto two serving plates.
Make two omelettes to serve 4.
For convenience, cook a small chicken breast in microwave oven 2-3 minutes or until no longer pink inside.

* For gluten free: if using pre-packaged shredded cheese choose one that is gluten-free. Grease the skillet with vegetable oil or use a gluten-free cooking spray. If serving with salsa, make sure it is gluten-free also.
