|1 cup||Egg Creations Whole Eggs Original, well shaken (about 200 g)|
|salt and pepper, to taste|
|2 tbsp / 30 ml||cream cheese, softened, cut into pieces|
|4||thin slices ham, cut into strips|
|2 tbsp / 30 ml||salsa|
Spray two 1-cup (250 mL) ramekins or custard cups with cooking spray.
Whisk eggs in a medium bowl until very frothy; season with salt and pepper.
Add cream cheese into eggs and beat with a fork; add ham.
Divide the egg mixture between the two ramekins.
Microwave on MEDIUM-LOW (30%) until firm, about 6 minutes.
Remove from microwave; invert each ramekin on an individual plate.
Top with 1 tbsp (15 mL) salsa. Serve immediately.
