Simple Egg and Avocado Bagel

Simple doesn’t have to be boring! This 2 min breakfast sandwich with avocado is guaranteed to satisfy hungry bellies.

Ingredients

pinch salt & pepper, to taste
1/2 avocado, mashed
1 handful baby spinach
2 slice tomato
1 everything bagel
1 EGG Bakes! Egg Patties

Directions

  1. Toast bagel in the toaster.

  2. Microwave egg patty on high for 75 seconds.

  3. While bagel is toasting, mash avocado and mix in a pinch of salt and pepper.

  4. Add heated egg patty and rest of the ingredients to bottom half of the bagel.

  5. Spread the top half of the bagel with mashed avocado and place bagel on top. Enjoy!

Tips: Hard Boiled

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
