  • Prep time: 15 min
  • Makes: 6 Baby Yoda’s

Nutritional Information

Ingredients

6
EGGS2go! Omega 3 hard boiled eggs
1/2
avocado
2 tbsp
mayonnaise
1 tsp
mustard
salt and pepper, to taste
6
snap peas (ends only, for the ears)
12
whole black peppercorns (for the eyes, see tip)

Directions

  1. Slice the hard-boiled eggs in half lengthwise. Gently remove the yolks and place them in a bowl. Set the egg whites aside.

  2. Add the avocado, mayonnaise, mustard, salt, and pepper to the bowl with the yolks. Mash and mix until smooth and creamy.

  3. Pipe or spoon the filling into 6 of the egg white halves.

  4. Take the remaining 6 egg white halves and cut them in half to create the top of Baby Yoda’s carriage cover. Gently place one piece on top of each filled egg.

  5. Create the face by pressing two snap pea ends into each side for ears and placing two whole peppercorns at the front for eyes.

  6. Serve and enjoy!

Tips

  1. Important: Remove the peppercorns before eating.

  2. Snack tip: You’ll only use the ends of the snap peas. Enjoy the rest as a snack, along with the extra egg whites.

  3. No snap peas? Thin strips of green beans or celery work well as substitutes.
