Ingredients

2 tsp / 10 ml vegetable oil
1 medium onion, chopped
1/2 cup / 125 ml green pepper, chopped
1 cup / 250 ml diced cooked ham
2 tsp / 10 ml Worcestershire sauce
8 medium soft flour tortillas (7"/17.5 cm)
1 cup / 250 g Naturegg Omega Plus cracked eggs, well shaken
1/2 cup / 125 ml milk
1/4 tsp / 1 ml each, salt and pepper
1 cup / 250 ml shredded cheddar cheese
salsa

Directions

  1. Heat oil in skillet over medium heat. Sauté onion and peppers 3 minutes. Remove from heat; stir in ham and Worcestershire sauce.

  2. Place about ¼ cup (50 mL) ham mixture onto each tortilla; roll up loosely and place, seam side down, in greased 11 x 7 inch (27.5 x 17.5 cm) casserole dish.

  3. Whisk together eggs, milk, salt and pepper; pour over tortillas. Cover and refrigerate at least 6 hours or overnight.

  4. Remove cover and sprinkle with cheese.

  5. Bake at 350°F (180°C) about 30 minutes or until set.

  6. Serve with salsa.
