Elegant Egg Pinwheels
These omelets, stuffed with peas and creamy goat cheese, are easy-to-prepare snacks or appetizers. You can simply double the recipe and serve hot or at room temperature.

Ingredients
- 1/3 cup / 75 ml
- goat cheese, crumbled
- 1/2 cup / 125 ml
- peas
- 1 cup / 250 ml
- Egg Creations Fat Free Cheese & Chive, well shaken
Directions
Spray large nonstick skillet with cooking spray and place on medium heat. Pour the eggs into the skillet. Turn the skillet to distribute the mixture evenly. Sprinkle the peas in the skillet.
Bake covered for 2 minutes or until almost firm. Sprinkle the cheese evenly over the egg mixture. Cook uncovered for 2 minutes or until softened and firm with eggs.
Gently loosen the omelette from the pan with a soft spatula and slide it on a plate. Let stand a little and roll the omelette tight. Slice the roulade into 1-inch pieces. (2.5 cm). Makes 12 pieces.

Try goat cheese with herbs instead of the plain goat cheese.
