Frozen Lemonade Meringue Pie

3 cup / 750 ml water
1 1/2 cup / 375 ml granulated sugar
1 1/4 cup / 300 ml Realemon Lemon Juice
1 tbsp / 15 ml Rose's grenadine
1 graham wafer pie crust (8-in./20-cm)
1 cup / 250 g Simply Egg Whites, well shaken
1/2 cup / 125 ml granulated sugar


  1. Stir water into sugar to dissolve. Bring to a boil in a small saucepan and simmer for 2 minutes. Remove from heat and stir in lemon juice and grenadine. Pour into a shallow pan and freeze.

  2. Break frozen mixture into chunks and blend until smooth. Spread into crust. Freeze for at least 4 hours.

  3. Use an electric mixer to beat egg whites for 1 minute. Add sugar gradually, beating until stiff peaks form. Swirl over lemon layer. Freeze for 30 minutes.

  4. Preheat oven to 400°F (200°C). Place frozen pie on a chilled baking tray. Bake for 5 to 7 minutes or until meringue is golden.
