Ingredients

potato, pre-cooked breakfast-style (see Tips)

cherry tomatoes
2 cup
baby spinach, packed

ripe avocado, sliced
Everything Bagel seasoning (optional, for avocado seasoning)

Directions

  1. Heat olive oil in a skillet over medium heat. Add cherry tomatoes and cook 3–4 minutes until softened and lightly blistered. Stir in spinach and cook just until wilted (about 1 minute). Transfer to a plate and set aside.

  2. In a bowl, whisk together Omega 3 eggs, Simply Egg Whites liquid eggs, salt and pepper.

  3. In the same skillet, reduce heat to medium-low and add butter. Pour in the egg mixture and gently stir with a spatula until the eggs are soft and creamy.

  4. In a shallow bowl, add your cooked potatoes, the warm tomato-spinach mixture, and the scrambled eggs. Add a sliced avocado and sprinkle it with Everything Bagel seasoning for extra crunch and flavour.

  5. Serve warm and enjoy! This bowl has 45 grams of protein!

Tips

  1. Prep potatoes in advance and store them in the fridge for quick breakfasts bowls.

  2. To make the potatoes: Boil 2 medium potatoes for 15-20 minutes or until tender. Let cool slightly, then cut into ¾-inch cubes. Toss with olive oil, salt, and pepper and roast at 400°F for about 20 minutes until golden and crispy.
