Ingredients

slice of ham steak, trimmed to fit

slice of Swiss cheese, trimmed to fit
1/4 cup / 60 g
Egg Creations Whole Eggs Original, well shaken
1 tbsp / 15 ml
each chopped green onion and red pepper

English muffin, bagel or round bun, toasted

Directions

  1. In a greased ramekin or custard cup place the ham, a slice of Swiss cheese and sprinkle with green onion and red pepper.

  2. Pour enough eggs ensuring ingredients are covered.

  3. Place in a microwave and cook on high (100%) power for 1½ to 2 minutes or until set. Let stand 2 minutes.

  4. Run a think spatula around the egg patty and turn out.

  5. Serve on a toasted English muffin, bagel or bun (buttered if desired).

Tips

  1. The ramekins can be baked in a preheated oven at 350°F/180°C for 15 to 20 minutes instead of in the microwave if preferred.

  2. Green onion and red pepper can be omitted for kids who prefer their eggs plain.

  3. Egg Creations Fat Free Original can be used for a lower fat option.

  4. Use the ramekin base as a guide for trimming the ham and cheese. Leftover ham can be diced and used for another purpose. Leftover cheese is great for snacking while you wait for the eggs to cook.
