Egg White Southwestern Quesadillas

Ingredients
- 2 tsp / 10 ml
- butter
- 1 cup / 250 ml
- Naturegg Simply Egg Whites
- 4 large
- whole wheat tortillas
- 1 cup / 250 ml
- shredded low-fat cheddar cheese
- 1/2 cup / 125 ml
- salsa
- 1
- avocado, chopped
Directions
- Melt butter in small nonstick skillet on medium-low heat. Shake egg whites well and pour into skillet; cook for 1-2 minutes, or until bottom is golden and eggs are no longer runny. Using a rubber spatula, fold the other half of the omelette over. 
- Top tortilla with cheese and avocado. Slide omelette onto tortilla and fold in half. 
- Place quesadilla on skillet to warm, 1-2 minutes or until tortilla is browned and cheese has melted. Repeat with remaining ingredients to make the other servings. Serve with salsa. 
Tips
- Garnish with fresh cilantro before serving.
